Joseph's Pasta Company was built around the idea of
providing made-from- scratch
ravioli to the foodservice industry.
Joseph's never compromises freshness or quality. From produce to
poultry, they carefully select ingredients and take the time to prepare
ingredients the proper way, maximizing flavor and texture. They roast
fresh garlic, caramelize onions, blanch fresh asparagus and reduce
wines, cream or natural stocks. For example, wild mushroom ravioli
starts with the finest shiitake and crimini mushrooms, which are sauteed
gently in extra virgin olive oil and combined with slow-roasted
portabellas, fresh whole roasted garlic cloves and whole milk mozzarella
cheese.
To ensure that large pieces of ingredients can be placed into the
ravioli, Joseph's has purchased the finest Italian ravioli-making
equipment combined it with a custom filling system. The result is a
rough-chopped handmade look with identifiable ingredients.
Finally, Joseph's par-cooks the ravioli utilizing Quick-Cook Technology.
This
allows the ravioli to be defrosted before service saving valuable line
time and labor. Par-cooked dough reduces breakage and protects against
temperature variation and makes possible the thinnest dough in the
industry. Joseph's uses only custom milled 100% stone ground semolina
flour and Grade A whole eggs to make a dough that is slowly kneaded and
rolled extra thin. The result is pasta with a made-from-scratch look and
