Brief History of Maryland Quality Meats
In 1927, Russell D. Niller, Sr. and
William Lusby purchased a building in downtown Baltimore which had been
vacated by the House of Sills, one of the premier poultry suppliers on
the
East Coast.It was in this building
dating back to 1887, which is now the site of the Baltimore Convention
Center, and with one truck that the Maryland Hotel Supply was founded. The first customers of the new company were
the downtown hotels which surrounded the harbor where the brisk shipping
business of the day had created a need for such a purveyor. The original product line consisted only of
meats and poultry. The founding concept was good service and quality products. The Company was reorganized as a Maryland
corporation in December, 1948.
In 1972, the Company completed construction of its present plant to provide for the efficient flow of the
hundreds of orders processed daily. The building was enlarged in 1978 and again in 1990 and now covers approximately 48,000 square feet. The
production areas were totally renovated in late 1993. This change nearly doubled the custom fabrication capacity of the plant.
As a designated "total quality control" USDA inspected operation, the Company has built its reputation
on custom fabrication to individual specifications. In 1983, Maryland Hotel Supply became one of the first distributors of Certified Angus Beefİ in the nation. We have sold
over a million pounds of Certified Angus Beefİ each year for the past tweleve years.
In 1985, the Company became affiliated with the Unipro cooperative buying group. Our association with this organization enhances our purchasing
position and affords us access to many new products.
Throughout its history, the Company has enjoyed a stable, loyal work force. The Niller family, which still owns the company today, has always
regarded good employees as one of its most important assets. Comprehensive benefit plans and profit sharing are means by which the Company returns its success to its employees.
In 2003, the company updated its business name to Maryland Quality Meats which is a division of the
Maryland Hotel Supply Company. The new name more accurately reflects the continued focus of the company on its center-of-the-plate meat products.
From its first service area of several square miles, the Company now delivers throughout Maryland, the District of Columbia, northern Virginia and
Central Pennsylvania. While many things have changed over the years, the commitment to service and quality made back in 1927 by its founders has never changed. It never will.
